Please don't dye corn flakes green and feed them to hamsters. Or put battery current through plants. Or try to build a rocket. Rockets only mean tales of woe when you're judging a science fair.
Try tracing your home's electric power lines back to the substation or generating plant. That's an idea I've always recommended but nobody ever seems to try.

since my daughter is also in 8th class, & we recently did a science projecr, perhaps my tips may suit u the most - -
a) don't be over-enthusiast for chemistry projects, they are attractive, easy but may be dangerous if u are not experienced in handling chemicals.
b) a good idea will be to collect samples of different types of soils & prepare on a chart paper the various characteristics.
c) what we did is the project on optics(physics) on reflection & refraction of light,highlighting formation of rain-bow which we got from about.com
