thank you for all the things you have taght me you have really encourage me
to do my best so this year im going to take the time and might do extra
classes. I know that lots of kids last year had never really respected you
but I knew that you just wanted us to be succesful so I just want to say I
have always respected you even though it didnt show I would just like you to
know that. So thank you and enjoy the rest of your summer!

As a teacher, I'd say your first e-mail said more than enough. I think your actions from now on will be most meaningful to your former teacher. Back up what you say and do well in school. Maybe at the end of the next semester you can give her an update. I wouldn't pressure yourself to keep up a correspondence via email though.
