so how many should i get?

Either get 1 for each class where you'll need one (all but Dance, is my guess), or one large one with dividers (my personal preference).
I don't know of any particularly quiet brand, but either go and test them or use folders instead of binders, but be careful not to lose your papers. For yearbook, you might get an artist's portfolio to carry page layouts, if they're doing it the old fashioned way.
Why do they need to be quiet? Everybody in class will have them, so the noise should be expected. If it's your own personal sensitivity, consider using earplugs except during lecture. They don't cut out all the noise, but soften it a lot.
