Anything that you have a personal interest in and can write about in your application essay. Having a lot of extra curricular activities seems like a good idea but it can backfire horribly. If you list a whole bunch, then people will think you only did them to "look" good, where as if you have a few that are somehow related to each other (drama club, directing an elementary school play, volunteering in restoring a theatre) then it will show that you have passion and commitment and THAT will really speak to your character as a dedicated person.
Colleges usually love when you help someone or something. Like volunteering at the animal shelter or an orphanage. They also look greatly upon musical activities such as playing an instrument, acting, or singing. Art also seems to be a winner.
