It depends on what you are doing. I was taught in highschool typing class that there should always be 2 spaces after a period. Then, in college, I had to write papers in APA format and only 1 space is used for that. I guess it just depends.
Back in the days of the typewriter 2 spaces were recommended. With variable spacing on a computer now 1 is enough.

if you are writing an essay or letter use it twice especially when double spacing. if you are just typing on YA or aim then it doesnt matter.

I always do it twice. That's the way I was taught in typing class back in grade school.
However, I think it is also acceptable to only do it once; and I think that nowadays it may be being taught to only be 1 space, but I'm not for sure.
