Go to a community college and get an AA with an emphasis on biology or chemistry or whatever science you like that applies to nutrition. Once you have your AA, that means that you have your generals completed and can go on to the bachelors. You will only have 2 years left of college...which is great!
You don't even have to get your AA in order to go to a college and start your nutrition major--you can take a year or two at the comm. college and then transfer. This will save you TONS of money because you're not paying big bucks for going to a "real" college and you can gear your coursework toward what your BA will require while at the community college. If you have a school in mind that you'd like to go to, ask to talk to someone in the nutrition science department and talk to them about your options/what classes you should take at comm. college. They'll be helpful and you don't need to be enrolled to get their help.
As far as I know, you have to get a four year degree/BA.

Check with your local Community College. See if they offer an Associates of Science with a concentration in nutrition.
