Sure it's true, mainly because saying you "miss" something implies that you've had it before, lol.
You can easily /want/ something you don't have, and mourn your lack of it--like the freedom, luck, and sex mentioned by the guy above me, among other things.
So, if you read the word "miss" literally, then it's a (pointless) statement of the obvious based on the meaning of the words. And you take it a bit more figuratively, then it's not really true at all (although if you're trying to use it to make some specific point, I suppose you could make a case for it on a similar basis as "you don't know the value of what you have until you don't have it anymore").

gosh, i am not the sharpest pencil in the box and didn't like school but that sounds true to me. yep, that is true to my way of thinking. yep, yep it is absolutely true. like i never get best answer so i don't miss it. same with picking up the ladies at the pub. always turned down so i don't miss the either. but at least i get gud and soddy drunk before going home to face that cranky crew.

No i don't think it's true about almost everything, I've never had money, good fortune and i think it would be good at least for me if i had them, even for a while, makes life a whole lot easier.
Yes, it is true bcause when you don't have it you dont know what is it or how good/bad it is,so you never miss it.
