Pair them up and ask them to draw each other
Have someone stand in the front of the room and tell the kids to draw what they are doing only with their eyes clothes.
Buy the usual crafts: playdoh, paint, blocks, stamps, paper, crayons, markers, etc.
When I was in grade school the favorite two crafts I ever did were 1 - create my own story book. You can make blank books out of construction paper and have the kids come up with stories then add pictures to the stories (if they can't write, you can write the story in for them).
2- we made paper mache birds. I don't remember much about because I was so young but I remember that I liked the smell of paper mache and I liked putting feathers on my bird.

Depending on what your budget is and what materials are at hand, you can have the kids make t-shirts, with paint or tie died, belts, wallets, leather crafts, Popsicle stick bowls or picture frames, origami, paper airplanes, stationary or note pads or books, decorate pots and plant something in them. Make key chains with leather strings and beads and conchs, angels out of Perls and thin wire that you can turn into x-mas ornaments or broches, decorate gift boxes, make centerpieces out of Styrofoam and other materials, potpourri out of wood chips and other decorative seed pods, pictures out of yarn or other things glued to paper and if all else fails there are always the good old macaroni necklaces.
I loved making collages as a kid.
I'd suggest finding crafts connected with different cultures/heritages.
Give the children two pieces of fabric and on one a pattern the other plain. On the plain tell them to draw a picture on it. Then give them them the materials to make a pillow.
