Unfortunately I am going to do nothing with it since I didn't have enough students enrolled this term. I guess I will get caught up on an extended summer break and do some personal study time to improve myself.

Have you thought about using different color yarns to make pictures. I would have them do pictures of what they did in the summer or family and friends or favorite animals.
I think maybe a Murial in your class room of something that means a lot to them the school, beach, maybe the zoo have them all pick an animal from the zoo.
