What are some good spanish projects to do for 8th grade students?

You could get them to do a project on themselves. Their likes and dislikes, Their families, Holidays, Pet's etc...I did this in French and it was very enjoyable :-] And it can go on for a while so no need for any lesson plans
But make sure you mark them thoroughly because children hate it when they do a really good piece of work and then they get the tiniest red tick in the corner and a "Good work"
Believe me they will never try hard again :-]
one assignment could be to make family tree in espanol.
Depends on what you're covering in class, I find that if its relevant to the vocabulary learned in class they'll enjoy the projects more. If you're covering family you can have them do a family tree, if you're covering food, have them do menus, and you can create your own restaurant in the classroom and they may use the menus they created, they can bring in food... If you're teaching clothing they can create their own store and or have a talent show...Hispanic Heritage Month is from Sept 15-Oct 15 you can have them research a famous Hispanic, writer, singer, actor and make a collage or presentation on them...I hope this helps!
