Officially, emo is short for "emotional". It's very much like goth, but more "i hate myself" than "i hate the world". Emo art (like poetry, stories, drawings, etc) is very dramatic, and self-centered on how much your life sucks.
Emo kids are stereotypically like goth (dress in black, depressing, etc.) but don't have to be. They just have to have that "everything sucks, I hate myself" kinda mentality.

It's short for "emotional." It just means your "deep" and "sensitive." It tends to mean you are "brooding" and it is usually the oppisite of "preppy" (which means "peppy," "optimistic" and sometimes "girly")

Okay, all the previous answers sucked, so I'll help you out. Originally, emo was used to designate a type of metal music with emotional lyrics. After a few years, the term started to shift.
Suddenly, it was used to describe semi-punk rock music bands like Jimmy Eat World, Dashboard Confessional, Saves the Day, and even Weezer; basically, it started getting fixed onto anything with emotional lyrics. That was about five years ago.
Now, however, the new breed of high school kids have switched the label to mean semi-goth kids who listen to depressing lyrics and blah blah. What's hilarious, though, is this: these kids have no idea about the origin of the word, and if you ask them for examples of what being "emo" is or what an "emo" band is, they have no clue. The word is just being applied now to anybody who's whiney or depressed.
