You won't believe this but, Jeopardy contestants are given a book of possible questions/answers they will encounter on the show a couple days before the taping of the show. Although they score a minimum of 140 on a standardized IQ exam in order to get on the show, they still get a cheat sheet to prevent too many questions from going unanswered.
When you are accepted for the show, they give you some books to study before you are allowed onto the show... I had a friend who was on Jeopardy.
As for the Wheel of Fortune... that takes no intelligence at all... as is evidenced by people not knowing the bonus questions.
A lot of the questions they ask are specific knowledge questions that brainiacs tend to know a lot about. Don't you ever know a lot of the questions they ask? Your education and studies tend to prepare you for those types of questions.
