What is the history behind the name shepherds pie? Also because it is called pate chinoise in french?

Shepherd's Pie is called that because the meat is lamb (or mutton) - shepherds tended sheep! Cottage Pie is the same dish, only the meat used is beef. I'm from the UK.

I was always told it's called Shepherds Pie because it was made from mutton or lamb.
It was traditionally served on Monday to use up the leftover Sunday roast of mutton or lamb.
The cold leftover meat was minced and seasoned and topped with mashed potato and browned in the oven.
