In terms of literature, the canon refers to a collection of books that is "generally accepted as representing a field."

For example, the canon of Western literature may include books like "The Hunchback of Notre Dame," "Moby Dick," and lots of stuff from Shakespeare, Henry James, John Steinbeck, etc. Stephen King -- not so much.

There's no one master list of all the books in the canon. Different people have different ideas. Rule of thumb -- if it's old and not particularly fun to read, there's a good chance it's in the canon.

When it comes down to it, the question of whether a text is canonical has to do with value. We can all appreciate a handbag or a car with a certain pricetag or label on it. Whether or not something has been canonized means that knowledgable others have looked at the item and determined its place within the metrics of literature.
