I call it trying to make sure I actually get the entire paper! Too many times I have picked up the top paper only to find out that someone else has taken/stolen the section that (s)he wanted and left the rest -- I, too, sometimes pick from the middle --- just to be sure! ( You can sometimes tell by the thickness of the paper or whether it is still put together from the publisher ) :-)

Discriminating. In business, it's the sample. However, in accounting parlance, it's called FIFO - First IN, First Out.

I do that myself. I think it's because we have a silly idea that someone with a horrible disease could have touched the first one.
